 Sticky rice, also known as glutinous rice or “malagkit” in the Philippines, is a staple ingredient in many traditional Filipino delicacies. It is characterized by its short, opaque grains that become soft and sticky when cooked, making it ideal for both sweet and savory dishes. The use of sticky rice in the Philippines dates back to pre-colonial times, when early Filipinos cultivated indigenous varieties of rice in lowland paddies and upland terraces. It plays a central role in Filipino cuisine, featured in native desserts such as suman (rice wrapped in banana leaves), biko (sweet rice cake with coconut milk and brown sugar), and palitaw (boiled rice cakes coated with coconut and sugar). Sticky rice remains an enduring symbol of Filipino tradition and communal celebrations, often served during fiestas and family gatherings
